Executive Assistant to Rachel Scheer Nutrition
McKenzie is a NASM certified personal trainer with a specialization in Nutrition. She graduated from Texas A&M with a B.S. in Psychology.
McKenzie became passionate about Nutrition and Fitness after she completed a 12-week program back in 2016 after suffering from an eating disorder and feeling lost when it came to living a healthy lifestyle. The knowledge and confidence that she gained from this program inspired her to pay it forward. The thought of helping others achieve this confidence through personal training and nutrition education was something she knew she wanted to do for the rest of her life.
As someone who has suffered from severe gut issues herself, Rachel Scheer Nutrition’s approach to looking at the entire person and addressing the root cause was something she wanted to be a part of.
As Rachel’s assistant, McKenzie helps with Rachel’s social media marketing, managing client relations, and assisting RSN’s dietitians. All to help ensure RSN operates smoothly and efficiently while our clients have the most optimal experience with us!
Registered and Licensed Dietitian
Christine Forsythe is a Registered and Licensed Dietitian with a mission to address the root causes of her client’s symptoms through diet and lifestyle changes.
Christine’s journey to becoming a dietitian started at a young age. Her whole family is in the medical field, so health and wellness are in her DNA.
It wasn’t until after her first year in college, at Oklahoma State, that the power of food took hold in a personal way. Christine learned that she was intolerant to gluten, a protein found in wheat and other grains and that she would have to shift the way she ate completely.
Several years later, after suffering from weight gain, cystic acne, hair loss, and mild depression, Christine was diagnosed with polycystic ovarian syndrome (PCOS), a hormonal condition that causes insulin resistance accompanied by inflammation. After receiving this diagnosis, Christine dug even more into her diet and found that there is a way to battle and alleviate her symptoms naturally, and without medication.
Christine understands that food is a powerful tool. She has experience in the medical environment, helping patients maximize the healing process, and has also worked extensively with collegiate athletes, optimizing performance with diet. From meal planning to tailoring recipes to suit an allergy to coming up with healthy snacks that fit your lifestyle, Christine can make it happen.
Whether you are looking to lose weight, optimize performance, heal from an injury, or professional accountability to maintain a healthy lifestyle, Christine is here for you.

Registered and Licensed Dietitian
Jace Rhoden is a Registered and Licensed Dietitian with a passion for sports nutrition and coaching clients in their efforts to lose weight, build muscle, and discovering the root cause of symptoms to make healthy lifestyle changes with sustainable results.
Jace began his journey in Abilene, Texas earning two bachelor’s degrees in biology and nutrition from Abilene Christian University, and a master’s degree in sports nutrition from Texas Woman’s University.
At a whopping 90 pounds as an incoming freshman in high school, Jace realized the importance of proper training and nutrition. He fell in love with the process of being rewarded, both physically and mentally, for the hard work put into improving himself and saw how that drive and determination transferred into his school and work-life and allowed him to succeed in his careers.
Jace’s interest in nutrition continued to blossom when he began natural bodybuilding and discovered how great of an impact precise nutrition plays on performance, body composition, and overall health. Jace sought to expand his knowledge and use his passions and gifts to provide healing and a better quality of life in the healthcare field. For the past 5 years, Jace has been working at an acute care hospital and rehab facility in Mesquite, Texas as the head clinical dietitian and Director of Nutrition while also operating his own nutrition company on the side to continue to grow his passion for sports nutrition. Jace also consults for the Dallas Stars hockey organization where he provides individualized meal plans to the athletes, sports-specific nutrition education, and assists in monitoring and tracking health and performance data to improve players’ abilities.
Whether you are looking to lose fat, build muscle, improve performance, or need more detailed help related to gut and hormone issues, Jace is excited to be your advocate and coach you through every step along the way.
Karlei Summerford, MS, RD, LD
Karlei Summerford, MS, RD, LD is a Registered Dietitian committed to providing guidance for her clients about food and lifestyle choices that heal — physically and emotionally.
She graduated from the University of Arkansas with a B.S. in Human Nutrition and Dietetics. Driven by her experience in the clinical field she decided to continue her education to earn a Masters of Science in Nutrition from Texas Woman’s University where she addressed a variety of symptoms in patients from hormonal imbalances to autoimmune disorders.
Karlei knew at a young age she wanted to pursue medicine. She felt fulfilled most using her knowledge and relationship skills to serve others. It wasn’t until she got deeper into the relationship between ingredients and our bodies during a study abroad experience in France that she realized diet and nutrition were the medicine she was truly passionate about.
Her professional journey was further inspired by her personal one: Close friends were diagnosed with polycystic ovarian syndrome and struggled with eating disorders and depression. She saw firsthand how hard it can be to battle these types of things alone and how tiresome it is to search for a solution, but also, how life-changing it can be when nutrition coaching and education are introduced. She discovered how an active lifestyle and an intuitive diet impacted her own life in a positive way, too.
Now, she’s on a mission to help her clients address the root cause of their symptoms, make lifestyle improvements, and get in touch with their best selves through functional nutrition. Whether you are seeking help in managing a tricky diagnosis or simply looking for a way to maintain healthier choices, Karlei will create a personalized approach to help you achieve and maintain your goals.
Elsie Maxin, FNP-C
Certified Family Nurse Practitioner
Elsie Maxin is a family nurse practitioner who holds certification through the American Association of Nurse Practitioners. She completed her bachelor’s degree and master’s degree at The Medical University of South Carolina College of Nursing in Charleston, South Carolina.
Elsie has always had a passion for patient education, health promotion, and disease prevention. However, this passion can be difficult to pursue when practicing traditional western medicine.
Elsie always knew she wanted to have a bigger impact on patients but wasn’t sure exactly how. Then she met Rachel Scheer and everything changed.
For several years, Elsie experienced bloating, difficulty losing weight, acne, chronic fatigue, anxiety, and depression. As a child, she was even diagnosed with psoriasis, an autoimmune disorder that primarily affects the skin resulting in dry, scaly, itchy patches. She saw numerous medical providers and was treated with pills, creams, foams, lotions, and even steroid injections for a few years.
Through extensive functional laboratory testing, she was able to address the root causes and take control of her own health. She healed her body with exercise and proper nutrition based on her individual biological needs.
Being a client at Rachel Scheer Nutrition gave Elsie a unique perspective and understanding of “normal” versus “optimal” when it came to health and wellness. So when the opportunity to become a coach within the practice presented itself, she jumped at the opportunity.
This journey will not be linear or easy, but Elsie is here to help clients navigate and take charge of their lives and become the best version of themselves!
